Yay! Friday is here!! No,not the weekend, although that is exciting huh? Its Dfeast time. It was super hard for me to choose this week, as I spent a lot of time in the kitchen, and made two meals that were outstanding “Mom its like heaven in my mouth”, according to Justice. But as requested by Sarah (@Sugabetic) I have chosen to go with my Frittatas!

(Serves 4) You will need:
8 -10 eggs
10 turkey sausage links
2 oz of stringbeans (can substitute for your favorite veggie)
Mozzerella cheese (I know, I use it in everything, its how I get Justice to eat things, he normally wont!)

Preheat oven to 400 degrees.

In a large mixing bowl crack your eggs, and add pepper, parsley, paprika, garlic powder, onion flakes, and if you have cilantro. Mix together and let sit for a moment.

Cut your mozzarella, sausage and stringbeans (if frozen defrost first with some warm water) into small cubes or pieces.

Using a large non stick saucepan,  coat with a thin layer of olive oil. Once heated toss in your sausage and stringbeans until nice and warm, if you like them brown you made brown them.

Now pour in your egg mix. Leave on medium flame. Once all of the edges are a nice brown, and you can see little bubbles forming at the top of the eggs, remove pan from stove and place in oven for 10-15 minutes.
This will fully cook the eggs.  

When eggs look like they are almost done, lay your cheese on top of it. Keep in oven until cheese is fully melted.

Remove from oven. This part is tricky. Slowly using a spatula lift the edges of the Frittata as not to break it. Then cut like a pizza. Serving size is totally up to you.

Put on a plate and top with some salsa. We like to service it with Nature’s Own Honey Wheat bread, NO HFCS.

Total carbs per serving:  About 3-5 grams
Bread: 30 grams
